Delicata Squash-in-a-Hole

As you all know, I love sunshine toast/egg-in-a-hole toast, especially my mom’s delicious version. Not only do I find it fun to eat, but also visually appealing. I'm a huge fan of food that looks good. And who isn't? I am much more likely to eat "healthy" when the salad has bursts of color and is stylistically arranged. When my dad and I were prepping this year's Thanksgiving menu, we found multiple delicious and nutritious recipes. But when it came to narrowing down our expansive list, we went for the ones that were  also "Instagram worthy." So as I prepared a delicious couscous salad with sliced and roasted delicata squash in it, I was drawn to the veggie’s beauty. With a flower shape and hollow center, delicata squash is very beautiful to look at, just like sunshine toast. I became eager to use the squash in other ways, leading to my idea to combine sunshine toast with the squash to make an even more beautiful dish. 

Now, I introduce to you Delicata Squash-in-a-Hole: veggies and eggs combine to make a dish that is almost too pretty to eat (almost). It doesn’t have a large active time, which makes it perfect for busy nights or lazy mornings.

So preheat that oven and invite your friends over for a delicious breakfast with which they will be easily impressed!

INGREDIENTS:

  • 1 large delicata squash
  • 6 Eggs
  • EVOO
  • Salt
  • Pepper
  • Optional: Trader Joes’s Everything but the Bagel Seasoning

DIRECTIONS:

Preheat your oven to 425 degrees. While the oven preheats, first coat an ovenproof dish lightly with olive oil. Then, prepare the delicata squash by washing and trimming the ends. Next, slice the squash into 1 inch slices. Scoop out the center from each slice.

Brush the squash (both sides) with olive oil and then place into the dish. Sprinkle with salt and pepper and place into the oven for 15 minutes, or until tender.

Remove the pan from the oven and decrease the heat to 350 degrees. Choosing the pieces of squash with larger holes, crack the eggs directly into the center. Sprinkle the eggs with salt and pepper and return to the oven for 10-15 minutes, or until the eggs are cooked. Remove from the oven. Using a spatula, transfer the squash/eggs from the dish and onto a plate. Sprinkle the squash with Everything but the Bagel Seasoning and serve immediately.
