Ten Minute Tortilla Pizzas

My family has many go-to meals for busy afternoons and nights, but one of my absolute favorites is a personal tortilla pizza. Even though we may all be running around, trying to check off items on our to-do list, these pizzas always force us to take a break together. The quickness of the dish ensures we can still get all our tasks done, while the individualization means we have to be present and cannot rely on another family member to make ours. Even though our schedules may be crazy, these pizzas always bring us together. Sometimes this quick break is all I need to feel rejuvenated and to remind me how grateful I am for all I have.

These pizzas come together in no time and are a nutritious (and delicious!) meal. I also love keeping my favorite ingredients in my dorm room, because this is the perfect meal for a busy night of homework, for when the dining hall just won’t cut it, or even for an afternoon snack. All these babies take are an oven or a toaster oven, a few of your favorite ingredients, and ten minutes of your time!

INGREDIENTS

Makes 1 pizza

 Olivia’s Go-To Pizza:

  • 1 whole wheat tortilla
  • ½ cup organic pizza sauce (my family loves the brand Pomi)  
  • 1 cup arugula
  • 4 pre-cooked microwavable sausages (I love Applegate’s Chicken & Sage or Peppered Turkey)
  • Oregano
  • EVOO
  • S+P

Moni’s Go-To Pizza:

  • 1 whole wheat tortilla
  • ½ cup organic pizza sauce
  • ½ cup shredded skim mozzarella cheese
  • 1 cup arugula
  • ¼ cup sweet onions
  • 3 pre-cooked microwavable sausages
  • Oregano
  • S+P

David’s Go-To Pizza:

  • 1 whole wheat tortilla
  • ½ cup organic pizza sauce
  • ½ cup shredded skim mozzarella cheese
  • 1 cup arugula
  • ¼ cup mushrooms
  • 5 Cherry tomatoes
  • ½ ounce fresh burrata
  • Oregano
  • S+P

DIRECTIONS

Pre-heat the oven or toaster oven to bake at 400 degrees. Coat a baking sheet lightly with olive oil and set a tortilla on top. While waiting for the oven to warm, cover the tortilla first with sauce, then (if using cheese) cheese. Follow with other toppings, saving the oregano, EVOO, and S+P for last. If using sausages, make sure to follow microwave cooking instructions before placing them on the tortilla. Once the oven is ready, place the baking sheet in the oven for 5-7 minutes. Let the pizza cool a bit and then enjoy!
